Our story
Started small. Still feels that way.
Bluebird Coffee & Bakehouse opened in 2018 with a single espresso machine, a used deck oven, and a fierce belief that Dillsburg deserved a proper neighborhood cafe. We bake every pastry, bread, and cake from scratch. No par-baked shortcuts, no freezer bags.
We source our coffee from a small roaster in Lancaster who roasts to order, and we rotate seasonal specials around whatever looks good at the farm stands. You'll see our menu shift with the calendar: butternut bisque in October, strawberry scones in June, a pumpkin latte that we refuse to put out until it's actually cold.
This place runs on regulars and we treat it that way. We know how you take your coffee, we'll save you a croissant if you call ahead, and we genuinely mean it when we say we're glad you stopped in.
